This humpday we've decided to go off the beaten path to showcase a great cut that isn't on everyone's shopping list. These are Veal Cheeks and before you ask, they're not from that end... These are from the facial cheek of the animal and it has a lot of muscle since it is used for chewing. Because of this, it is a very muscled and tough cut and is best suited for slow cooking. Low and slow is the best way to soften these up. With only two cheeks an animal, it is a specialty cut that your everyday supermarket doesn't keep stocked. Don't be afraid of heat and a little smoke!
There's no good way to get a solid sear on a steak or any piece of meat without turning the heat up. Cranking the heat is going to make some smoke when that meat hits the pan. It's 👌 Don't panic! Smoke makes for char and char is delicious 😋 Just open windows and silence that alarm before it starts blaring.

Here she is in her fully cooked glory🤤
We took this prime stuffed rib cap and seasoned the outside generously with seasonello, garlic, fresh thyme and rosemary. We added a coating of duck fat to crisp the outside shell. Next, we seared this 3lb. beauty on 450 for 15 minutes followed by an hour an 1hr 15 minutes at 350 for medium rare perfection😍

Reposted from @austin_bryan On a regular week a butcher/meat cutter does their thing 40-50hrs a week. We may have a few aches and pain. Maybe a Small cut or two maybe worse. But it’s at the end of the week, you’ve got 2 days off coming up to rest and recharge. If your lucky and days off aren’t broken up. During the holidays such as the end-of-the-year stretch, October -January, business is like waves peaking each month several days before each holiday. Physical and mental fatigue eventually catch up to you in December but you #push cause the finish line is in sight. And we finally get time to spend with our families. Back issues, carpal tunnel, arthritis, plantar fasciitis are unfortunate but inevitable parts of the trade. There’s also unseen mental toll. Depression, bi-polar, stress, anti social behavior, and addictions seem drawn to us like moths to a flame. But that is the trade. And most of us do it gladly and even derive enjoyment from the hard days work. It’s been more days than many can remember of this shut down. It feels like December 23 and has since the beginning. Most butchers even the older ones will tell you they have never seen anything like it. Unprecedented volume and shortages only add more pressure. Deemed essential we put on our coats, and aprons. Two layers to stay warm. Just in case we don’t get that break when we think we are. Tiger balm, and sports creams. Our knives. And now masks, which to say the least are uncomfortable and not as easy as we’d like to work in.
We’re here for you because we like our work. Please don’t forget that we have put ourselves at risk to serve you. We too have families that need fed and our reassurance.
