This boneless cut from the top round is great for broiling and grilling, which is partially where the name originates from. This prime London broil cut is tougher but full of flavor. For the best results, create an acidic marinade to break down the tougher tissue and slice against the grain to promote tenderness in.
Also referred to as Newport or Santa Maria steak, this crescent shaped cut of beef from the sirloin is very lean, but big in beef flavor.
