In general, lamb meat is incredibly versatile because of its naturally well-balanced taste and ability to absorb the flavor of whatever seasoning you choose, whether it be butter and garlic or rosemary and black pepper. Lamb shoulder chops, also known as blade or arm chops, require a little work, but the result is absolutely divine. Ideally, chops should be roasted in the oven for about three to five hours, depending on the weight, but you end up with a buttery, moist, and tender delight.
